Japanese Green Tea Panna Cotta

This green tea panna cotta is amazing, delicious and easy to make. You can also make green tea ice-cream which is great on a hot summers night. Green tea is full of antioxidants. When buying the green tea , look for MATCHA brand, this will give the best results, which will give a cleaner flavor in the finished dish.


INGREDIENTS

1 3/4 teaspoons powdered gelatin
2 tablespoons cold water
1 1/2 cups whole fat milk
1/4 cup and plus 3 tablespoons caster sugar
Pinch of salt
1 1/2 cups low fat buttermilk
2 teaspoons powdered Matcha green tea


METHOD

1. In a small bowl, sprinkle the gelatin powder in with the 2 tablespoons of cold water, let it sit for until the powder softens, about 4-5 minutes.

2. I a saucepan, combine the milk, all the sugar, and salt and warm over a moderate heat, stirring to make sure all the sugar is dissolved, about 3 minutes. Remove from the heat and whisk in the gelatin until completely dissolved, then whisk in the buttermilk. Pour 1 cup of this mixture into a glass cup, cover and refrigerate for use later.

3. In a small bowl, whisk the green tea powder with 1/4 cup of the remaining buttermilk mixture until dissolved. Pour the dissolved green tea into the buttermilk mixture in the saucepan and whisk well.

4. Pour the green tea mixture into serving glasses or metal cups, and refrigerate until just set, about 3-5 hours. Melt the 1 cup of refrigerated buttermilk mixture over a low heat till it is pourable and still cold. top each panna cotta with the buttermilk mixture. Cover and refrigerate until firm, at least 4-5 hours or better, overnight.
