INGREDIENTS 500 g boneless chicken thighs 2/3 cup mirin Japanese sweet rice wine 1 cup soy sauce 4 1/2 cups rice vinegar 1 teaspoon sesame oil 1/3 cup white caster sugar 7 fresh garlic cloves, very finely chopped 1 tablespoon fresh peeled ginger, very finely chopped 1/2 teaspoon chili flakes 1 teaspoon fresh ground black pepper METHOD 1. In a medium saucepan over high heat, bring the mirin wine to a boil and then turn down to medium-low and simmer for 10 minutes. 2. Add the soy sauce, rice vinegar, sesame oil, and sugar.
